Cool Avocado Soup

Ingredients
  • 2 Avocados
  • 2 cups chicken broth
  • 1 cup kefir (or buttermilk)
  • 1/4 cup white cooking wine
  • 1/4 cup minced onion
  • Juice of one lemon
  • Salt and pepper to taste

    Instructions
    1. Halve and pit the avocados and scoop flesh into blender.
    2. Add kefir (or buttermilk), cooking wine, chicken broth, onions, lemon juice and garlic and blend until smooth.
    3. Season to taste with salt and pepper.
    4. Refrigerate for 1 hour in a glass bowl before serving.
